Quinoa Salad Recipe
Ingredients
- 1 cup quinoa, cooked and cooled
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1 onion, finely chopped (optional)
- 1 cup parsley, chopped
- 2 tomatoes, diced
Dressing
- ¼ cup olive oil
- ¼ cup lemon juice (2-3 lemons)
- 1 tablespoon red wine vinegar
- 2 cloves garlic, minced
- ½ teaspoon sea salt
Instructions
- Cook the Quinoa: Rinse 1 cup of quinoa under cold water. In a medium pot, bring 2 cups of water to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is tender and the water has been absorbed. Remove from heat and let it cool.
- Prepare the Vegetables: While the quinoa is cooling, dice the cucumber, red bell pepper, tomatoes, and onion. Chop the parsley finely.
- Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, minced garlic, and sea salt until well combined.
- Combine Ingredients: In a large bowl, combine the cooled quinoa, diced vegetables, and chopped parsley. Pour the dressing over the salad and toss until everything is evenly coated.
- Serve: Serve the salad immediately or refrigerate it for a few hours to allow the flavors to meld together. Enjoy as a light meal or a side dish!
