Sausage & Spinach Quiche

  • 1 frozen pie crust
  • 2 cups cheese (Italian, Mozzarella, cheddar)
  • 1 lb sausage
  • 1/4 onion, diced
  • 2-3 cloves garlic, diced
  • 8 eggs
  • 1/4 cup milk
  • 3 cups spinach and/or arugula
  • Spices to taste

Preheat oven to 350 degrees.

Roll out pie crust in pan

Sautee onion, garlic, and spinach. Add sausage and cook until done

While mix is cooking, spread 1 to 1-1/2 cups of cheese on top of pie crust.

Add sausage, onion, and spinach mix. Top with remaining cheese.

Whisk eggs and milk together. Pour into pie.

Add seasonings to taste.

Bake 50 minutes or until cooked through.
